How We Make Our Handmade Cookies: From Dough to Delivery

When we say our cookies are handmade, we genuinely mean it. Every single cookie that leaves Clever Cookie has been shaped, filled, decorated, and checked by hand. There are no factory lines here, no conveyor belts, no automated anything. I started Clever Cookie back in October 2019 as a hobby while raising my 18-month-old daughter. The learning curve was steep — burnt batches, collapsed cookie pies, recipes that looked nothing like what I had in my head. But I kept going, started selling at local market stalls, and within six months we were selling out every weekend. Fast forward to today and we work from a commercial unit with a small, dedicated team, but the process is still the same: real hands making real cookies.

The Team Behind Your Cookies

Clever Cookie is intentionally small. Alongside me, there’s Melody, Nat, Poppy and Hannah. That’s it. We keep the team tight because quality drops the moment you lose oversight of what’s going out the door. Everyone who works here bakes, decorates, and packs. Everyone eats what they make. If we wouldn’t happily take it home and eat it ourselves, it doesn’t get sent to you.

Scaling up has never meant scaling back on care. We moved into a bigger space, bought better equipment, and increased what we can produce in a day — but every cookie still gets the same individual attention it got when I was baking alone at my kitchen table. That “baked at home” feeling is something we refuse to lose.

It Starts with Real Ingredients

This is where most bakeries cut corners, and it’s where we absolutely don’t. Our Belgian chocolate comes in as chunks, not chips. That distinction matters more than you’d think. Chips are designed to hold their shape when heated — they contain stabilisers that stop them from melting properly. Chunks are just chocolate, broken up. When they bake, they melt into uneven pools throughout the cookie, giving you that proper molten chocolate experience in every bite.

We use premium branded spreads and toppings across the board. Real Lotus Biscoff spread, real Nutella, real Kinder chocolate. The same goes for our Milkybar, our Oreos, our Terry’s Chocolate Orange. If it’s on the label, it’s the real thing. This is honestly one of the biggest things that sets Clever Cookie apart, and customers notice the difference immediately. Small Batch Mixing

We mix in small batches and always will. It might seem inefficient when you look at the numbers, but it’s the only way to keep consistency where it needs to be. When you scale up a dough recipe too far, the texture changes. The butter doesn’t cream the same way. The chocolate doesn’t distribute evenly. You end up with something that’s technically the same recipe but doesn’t taste like it.

Every dough is made fresh from scratch. No pre-made mixes, no frozen dough shipped in from a supplier, no shortcutting the process. Our recipes have been refined over thousands of bakes since 2019. Some took months to get right. The brown butter base for our Classic Cookies went through multiple versions before I was happy with it. That kind of development only happens when you’re making things by hand and tasting constantly.

Baking Different Products

Not everything bakes the same way. Each product in our range has its own method, its own timing, and its own set of things that can go wrong if you’re not paying attention.

Classic Cookies

Our Classic Cookies are baked until just set, then pulled from the oven when they still look slightly underdone. This is deliberate — they continue cooking on the hot tray for several minutes after coming out. Get the timing right and you end up with crisp edges and a soft, chewy centre. Leave them even a minute too long and you lose that texture entirely. It’s a narrow window and it takes practice to read it consistently.

Deep Dish Cookies

Our Deep Dish Cookies are a different beast. These are 500g giants and they need careful temperature control to cook all the way through without burning the outside. The filling goes in raw, which means the centre stays gooey when you reheat them at home. Getting the balance right between a fully baked shell and a molten interior takes real attention — every oven behaves slightly differently, and we adjust throughout the day.

Cookie Pies

Our Cookie Pies have their own two-stage process. The cookie crust gets hand crafted first. You’re looking for the filling to be set but still have a slight movement in the centre — it firms up as it cools. We sell these as individual slices or as whole pies, and the technique is the same regardless of size.

Cookie Bars

Our Cookie Bars are baked as a thick slab and then cut into individual portions. Toppings like chocolate chunks, Biscoff crumbs, or caramel pieces are pressed into the surface before baking so they become part of the bar rather than just sitting on top. Once baked and cooled, each bar gets its drizzle and final decoration before being wrapped.

Quality Control and Decoration

Every single cookie gets checked before it goes anywhere near a box. We’re looking at colour, shape, texture, and overall appearance. If something’s cracked in the wrong place, if the spread didn’t set properly, if it just doesn’t look right — it gets pulled. We’d rather remake an entire order than send something we’re not happy with. The pulled ones don’t go to waste, for the record. The team eats very well.

Decoration is all done by hand. Chocolate toppings on our Cookie Bars are each done individually — no jigs, no moulds, just a steady hand and a lot of practice. It’s time-consuming, but it’s part of what makes each cookie feel like it was made for you. Because it was.

What Can Go Wrong (And How We Fix It)

Baking is not always smooth. Ovens have hot spots that shift depending on the weather. Humidity affects how dough behaves — a recipe that works perfectly in winter can spread too much in summer if you don’t adjust. Sometimes a batch just doesn’t feel right when you’re shaping it, and you have to trust your hands over the recipe.

In the early days, I made every mistake going. Entire trays in the bin because I second-guessed the oven timer. Cookie pies that looked incredible but collapsed when cut. Dough that was perfect one day and completely different the next because I’d measured something slightly off. Those failures taught me more than any recipe book could. Now the whole team knows what to look for and how to adjust on the fly. It’s experience you can only get by doing it thousands of times.

Packaging and Freshness

We’ve put serious thought into how your cookies travel. Every item is individually wrapped to lock in freshness and prevent flavours from crossing over. Everything goes into sturdy boxes with protective inserts that keep products secure and separated, so nothing shifts around in transit.

The goal is simple: your order should arrive looking and tasting exactly as it did when it left our kitchen. We use an eco-friendly bubblewrap alternative for cushioning, and we’re always looking for ways to reduce packaging waste without compromising on protection. When you’re posting baked goods across the country, the packaging has to do its job or nothing else matters.

Baked to Order, Delivered Fresh

We ship everything via Royal Mail Tracked 24, and delivery is free on orders over £40. Your cookies aren’t sitting on a shelf waiting to be picked — they’re baked fresh after you place your order. That’s why we need a short lead time, but it means you’re getting cookies that were in the oven that same week. Most orders arrive within 1–3 working days of dispatch, and you’ll get full tracking so you know exactly when to expect them.
