Easter Cookies and Sweet Treats: Our Limited Edition Collection

Amy Hutton 8 min read

Easter is officially cookie season at Clever Cookie. Every year, as soon as Mini Eggs appear on the shelves, something shifts in our bakery. The conversation turns to Easter chocolates, and the experimentation begins. Which eggs should we fold into cookie dough this time? Can we push the Creme Egg brownie even further? What about that Caramel Egg idea we shelved last March? It's genuinely one of our favourite times of year, because Easter baking lets us play with some of the most fun, flavourful chocolates out there.

Our 2026 Easter collection is the result of all that tinkering, tasting, and tweaking. We're incredibly proud of what we've put together this year. But before we dive into the products, let's talk about why Easter cookies make so much sense in the first place. Easter is about sharing, gathering around the table, and treating the people you love. Whether you're hosting Easter lunch, filling a child's Easter basket, surprising a friend, or simply treating yourself after a long week, handmade Easter cookies hit differently to a shop-bought egg. They're personal, they're indulgent, and they arrive at your door baked fresh.

Fair warning: everything in this collection is limited edition. Once Easter is over, these flavours are gone until next year. We mean it — we can't make Mini Egg cookies in July even if we wanted to (believe us, we've tried to stockpile).

Why Easter Chocolates Work So Well in Baking

Not all chocolate behaves the same way in the oven, and that's exactly what makes Easter baking so interesting. Each type of Easter egg brings something completely different to a bake, and we've spent years learning how to get the best from each one.

Mini Eggs have that distinctive crispy candy shell, and when they're baked into cookie dough, something magical happens. The shell softens just slightly without dissolving entirely, while the chocolate inside melts into gooey pockets. You get this incredible contrast of textures — a little bit of crunch, a lot of melt, all wrapped in buttery cookie. The colourful shells also keep their colour surprisingly well, which means your cookies look as good as they taste.

Creme Eggs are a different beast altogether. That thick fondant centre melts into brownie or cookie dough and creates genuine swirls of sweet, creamy flavour running through the bake. It caramelises slightly at the edges where it meets the heat, giving you little pockets of toffee-like sweetness that you simply can't replicate with any other ingredient.

Caramel Eggs bring that silky, flowing caramel centre into play. Unlike fondant, caramel stays liquid at a lower temperature, so when your cookie is warm, you get actual pools of molten caramel inside. It's indulgent in a way that's hard to describe until you've tried it. Each Easter chocolate has its own personality in the oven, and we've tailored every recipe to make the most of it.

Mini Egg Treats

Mini Eggs are the undisputed fan favourite every Easter, and we've built three different bakes around them this year. Each one showcases the eggs in a different way.

Mini Egg Cookie Bar

Our Mini Egg Cookie Bar is loaded with whole Mini Eggs pressed into thick, chewy cookie dough. During baking, the eggs soften just enough that the chocolate inside becomes deliciously melty, while the candy shell retains a gentle crunch. Every bite has at least one egg in it — we're generous like that. You can grab an individual bar for yourself or order a whole slab to share. The slabs are brilliant for cutting into pieces at an Easter gathering, and they look stunning on a table with all those pastel colours peeking through golden cookie.

Mini Egg Deep Dish Cookie

The Mini Egg Deep Dish Cookie is our giant stuffed cookie taken to Easter extremes. We pack the centre with Mini Eggs so that when you cut through, you're greeted by colourful eggs nestled in warm, gooey dough. It's the kind of thing that stops people mid-conversation. Serve it warm with a scoop of vanilla ice cream and you've got an Easter dessert that nobody will forget in a hurry.

Milkybar Mini Egg Cookie Bar

For the white chocolate fans out there, our Milkybar Mini Egg Cookie Bar pairs creamy Milkybar pieces with crunchy Mini Eggs for double the Easter joy. The Milkybar melts into sweet, vanilla-scented pools throughout the cookie while the Mini Eggs provide bursts of milk chocolate contrast. It's a combination we tested on a whim last year and immediately knew it had to come back. White chocolate lovers, this one is yours.

Creme Egg Creations

Cadbury Creme Eggs are iconic for a reason — that thick, sweet fondant centre is unlike anything else in the chocolate world. Working with them in baking is a real art. Too much heat and the fondant disappears entirely; too little and you don't get that beautiful melting effect. We've nailed the balance, and these two products are the proof.

Creme Egg Brownie Cookie Pie

The Creme Egg Brownie Cookie Pie is where rich, fudgy brownie meets a buttery cookie crust, topped with Creme Egg halves that bake down into the surface. As the pie bakes, the fondant from the eggs melts into the brownie layer, creating gorgeous swirls of that distinctive Creme Egg sweetness running through dark, chocolatey brownie. It's absolutely indulgent — the kind of thing you slice thin because it's so rich, then immediately cut yourself another piece anyway.

Creme Egg Deep Dish Cookie

Our Creme Egg Deep Dish Cookie hides a whole Creme Egg baked right into the centre of our giant cookie. The trick is cutting it open while it's still warm — the fondant will be perfectly molten and ooze out as you break through the cookie shell. It's messy, it's dramatic, and it tastes incredible. This one always sells out first, so if it's calling your name, don't wait.

Caramel Egg Delights

Prefer caramel to fondant? You're not alone. Cadbury Caramel Eggs have that beautifully silky, smooth caramel centre that works wonderfully in baking — arguably even better than Creme Eggs for those who find fondant a touch too sweet.

Our Cadbury Caramel Egg Deep Dish Cookie takes the Deep Dish format and fills it with a whole Caramel Egg at its heart. When you break through the golden cookie shell, you hit pools of warm, molten caramel that flow out like liquid gold. The caramel stays beautifully runny when served warm, making every bite a combination of buttery cookie and rich, silky caramel. It's dangerously good — consider yourself warned.

Easter Rocky Road

Not everything has to come out of the oven. Our Easter Rocky Road is a no-bake treat packed with chunky pieces of chocolate, fluffy marshmallows, and a generous scattering of Mini Eggs throughout every slab. It's available as individual slices or a whole slab, making it perfect for Easter gatherings, gifts, or keeping in the fridge for whenever the mood strikes. Because it's no-bake, it keeps well for 10 to 14 days — so you can order it a little ahead of time without worrying about freshness. It's one of our most popular Easter items year after year, and for good reason.

Easter Cookie Gift Ideas

Easter cookies make brilliant gifts — often better than yet another chocolate egg, because they feel that bit more thoughtful and personal. Every order can be sent directly to someone with a gift message, so you don't even need to be the middleman.

Here are a few ideas we love. For kids' Easter baskets, a mix of Mini Egg Cookie Bars is always a winner — colourful, fun, and the perfect size for little hands. If you're heading to someone's house for Easter lunch, a whole Cookie Pie makes a seriously impressive host gift that doubles as dessert. For corporate gifting, our treats work perfectly as Easter gifts for teams and clients — something a bit different that people actually get excited about.

Want to build something completely custom? Use our Box Builder to put together your own Easter selection box. Pick exactly the treats you want, choose your box size, and we'll pack it all up beautifully. It's the easiest way to create a personalised Easter gift that's guaranteed to impress.

How to Serve Easter Cookies

Getting the most out of your Easter cookies comes down to how you serve them. Here are our tips from years of baking and taste-testing.

Deep Dish Cookies are best served warm. Pop them in the microwave for 15 to 20 seconds until the centre goes soft and gooey, then serve with a scoop of vanilla ice cream. The contrast between warm cookie and cold ice cream is unbeatable. Cookie Pies can be served at room temperature or slightly warmed. They cut neatly into 8 to 10 slices, making them ideal for sharing at the table after Easter dinner. Cookie Bars are great at room temperature — they're sturdy enough for picnics, Easter egg hunts, and packed lunches. No plates or cutlery needed. Rocky Road is best served chilled straight from the fridge. The cold keeps the chocolate firm and gives you cleaner cuts and a satisfying snap.

Order Dates and Delivery

All our Easter treats are available while stocks last, and we do mean that — once the Easter chocolate runs out, we can't get more until next year. We recommend ordering at least a week before Easter to make sure everything arrives in time for the long weekend.

Last order dates for Easter delivery will be announced on our social media channels and via our newsletter, so make sure you're following along to avoid disappointment. All Easter orders are baked fresh to order and shipped via Royal Mail Tracked 24. Delivery is free on orders over forty pounds.
