Why Everyone's Obsessed with Biscoff Cookies (And Our Best Biscoff Treats)

Amy Hutton 8 min read

If you've spent any time on social media lately, you'll have noticed that Biscoff has well and truly taken over. It's in cheesecakes, it's drizzled on pancakes, it's layered into trifles, and it's all over TikTok. But for us at Clever Cookie, the obsession started long before the trend. There's something about that warm, caramelised flavour that just works in baking — and in cookies especially. Biscoff runs through our entire range, from loaded cookies to deep dish showstoppers, because once you start experimenting with it, you genuinely can't stop. Here's why we think everyone's so hooked, and a proper look at the Biscoff treats we make.

The Story of Lotus Biscoff

Biscoff isn't some new invention dreamed up by a marketing team. It goes back decades. Lotus Bakeries started making their spiced caramelised biscuits in Belgium in 1932, and for years they were the biscuit you'd get with your coffee in cafes and on aeroplanes across Europe. If you've ever unwrapped one of those little individually wrapped biscuits on a flight and thought "that's actually really good" — that's Biscoff.

The flavour comes from the caramelisation process. The biscuits are baked at high heat so the sugars develop that distinctive deep amber colour and complex toffee-like depth. There are hints of cinnamon and ginger running through, but it's subtle — more of a warm, rounded spice than anything sharp. That's what makes it so moreish. It's sweet but not sickly, spiced but not overpowering, with a richness that sits somewhere between caramel and toffee.

Then in 2007, Lotus did something that changed the game for bakers everywhere: they released the spread. They took those iconic biscuits, ground them up, and turned them into a smooth, spreadable paste. It tastes exactly like the biscuit but in a form you can swirl, pipe, fold, and bake with. For anyone who works with flavours in a kitchen, it was a revelation. Suddenly Biscoff wasn't just a biscuit — it was an ingredient.

Why Biscoff Works So Well in Baking

Some flavours are brilliant on their own but tricky to bake with. Biscoff is the opposite — it's almost like it was designed for baking. The caramelised sugars in the spread have a low melting point, which means when you put it in an oven, it softens into these gorgeous pockets of molten caramel. It doesn't dry out or turn grainy. It stays gooey and luscious, which is exactly what you want in the centre of a cookie or swirled through a blondie.

The flavour profile is remarkably versatile too. Those warm spice notes complement chocolate — both milk and white — beautifully. The caramel depth pairs with vanilla and brown butter. It even works alongside fruit flavours like banana and apple. There aren't many ingredients that play this nicely with everything else in your cupboard.

Then there's the texture factor. Crushed Biscoff biscuits add a crunch that's completely different from a standard cookie crumb. It's lighter, crispier, and it carries that caramelised flavour right through. We use crushed biscuits as a topping on several of our products, and it gives this satisfying contrast against soft, chewy cookie dough. We always use the real Lotus Biscoff spread in everything we make — never an imitation or knock-off. You can taste the difference, and we think it matters.

Our Biscoff Cookie Range

At Clever Cookie, we've built a proper Biscoff collection because one product was never going to be enough. Each one uses Biscoff in a different way, so depending on what you're in the mood for — a quick snack, a full-on dessert, something to share — there's a Biscoff treat for that.

Biscoff Loaded Cookie

Our Biscoff Loaded Cookie is our bestseller, and honestly, it's not hard to see why. We start with a thick, soft-baked white chocolate chunk cookie base — properly chunky, with generous pieces of white chocolate throughout. Then we top it with a smooth, generous swirl of Biscoff spread and finish it with crushed Biscoff biscuits for crunch. It's indulgent, it looks stunning, and it's the cookie that got a lot of our customers hooked on the rest of the range. If you're new to Clever Cookie and you love Biscoff, this is the one to start with.

Biscoff Deep Dish Cookie

The Biscoff Deep Dish Cookie is our 500g showstopper and it's an experience. This isn't a cookie you eat casually — you break through the thick, soft cookie shell and hit a gooey, molten Biscoff centre that oozes out. We pipe the Biscoff filling in before baking so it melts down into this incredible molten core. It's the kind of thing you warm up for a few seconds in the microwave, grab a spoon, and share — or don't share, we won't judge.

Biscoff Blondie Cookie Pie

Our Biscoff Blondie Cookie Pie takes things in a slightly different direction. It's a rich blondie filling, swirled generously with Biscoff spread, baked inside a cookie crust. The result is somewhere between a blondie, a cookie, and a pie — dense, buttery, and absolutely packed with flavour. Available as a slice if you want a treat for yourself, or as a whole pie if you're feeding a crowd (or just having a really good week).

Biscoff Cookie Bar

The Biscoff Cookie Bar is your portable Biscoff hit. It's a cookie bar format that's perfect for popping in a lunchbox, having with your afternoon cuppa, or keeping in your desk drawer for emergencies. All the Biscoff flavour in a convenient, snackable shape. Sometimes you don't need a whole deep dish — sometimes you just need a really good cookie bar.

Biscoff Rocky Road

Our Biscoff Rocky Road is chunky, chocolatey, and completely over the top in the best way. Thick chocolate loaded with marshmallows, biscuit pieces, and generous swirls of Biscoff spread running through the whole thing. Every bite is different — you get pockets of gooey marshmallow, crunchy biscuit, smooth chocolate, and that unmistakable Biscoff warmth. It's one of those treats that disappears suspiciously fast whenever we make a batch.

How We Use Biscoff in Our Kitchen

One thing we get asked a lot is whether we use "real" Biscoff or some kind of catering version. The answer is always the same: we use the real Lotus Biscoff spread — the exact same jars you'd pick up in the supermarket. We've tried other options and nothing comes close to the flavour of the original.

Each product in our range uses Biscoff differently, and that's part of the fun of developing new recipes. For our loaded cookies, we swirl the spread on by hand after baking so it stays smooth and glossy. For the deep dish cookies, we pipe it into the centre of the raw dough before they go in the oven so it melts down into that gooey filling. For the blondie cookie pie, we fold it through the batter so you get these beautiful marbled ribbons of Biscoff running through every slice.

Amy developed our Biscoff loaded cookie recipe quite early on in Clever Cookie's journey, and it became an instant hit. It was one of the first products that really took off for us, and customer demand is what pushed us to keep experimenting with Biscoff across new formats. The deep dish came next, then the cookie pie, and the range just kept growing from there. When something works this well, you lean into it.

Biscoff Flavour Pairings We Love

One of the things that makes Biscoff such a brilliant ingredient is how well it plays with other flavours. Here are the pairings we keep coming back to in the kitchen.

White chocolate and Biscoff is a match made in heaven. The creamy sweetness of white chocolate complements those warm, spiced caramel notes perfectly without competing with them. It's a pairing that feels indulgent and balanced at the same time, which is exactly why we use white chocolate chunks in our Biscoff Loaded Cookie. The two flavours melt into each other and create something that's greater than the sum of its parts.

Banana and Biscoff is a seriously underrated combination. The natural sweetness and creamy texture of banana works beautifully alongside that warm Biscoff spice. If you love banana bread, you already know the flavour family — it's that same comforting, baked warmth. Our Banana Bread Classic Cookie captures that beautifully if you want something in that neighbourhood.

Coffee and Biscoff is the classic pairing, and there's a reason the original biscuit was always served alongside a cup. The bitterness of a strong coffee cuts right through the sweetness of Biscoff and enhances those deep caramelised notes. If you're heating up one of our Biscoff deep dish cookies or having a cookie bar as an afternoon treat, make yourself an espresso or a strong flat white alongside it. Trust us.

Dark chocolate and Biscoff is a pairing for people who like things a bit more grown-up. The richness and slight bitterness of dark chocolate against that warm, sweet spice creates something really sophisticated. It's a combination we love experimenting with, and if you're a dark chocolate person, it might just become your favourite way to enjoy Biscoff.
